This beloved butchery, which first opened its doors in Asheville, has introduced its offerings to Charlotte residents, just in time for all those festive meals we look forward to this time of year.
Located at a prime spot on Selwyn Avenue, The Chop Shop Butchery has quickly made a name for itself since its opening in late August. Many local customers already knew about the butchery thanks to word-of-mouth from the Asheville location or from the convenience of their online ordering platform. Now, those in Charlotte can walk right in and browse an impressive selection of prime cuts of beef, pork, and poultry. It’s a true delight for any meat lover!
Uriah Standish, the general manager, shared, “Everyone who’s been ordering delivery from us in Charlotte for the past few years have been excited to have our full offerings available to them.” It sounds like the local community is already embracing this fresh meatery with open arms. The butchery sources its meats from around ten small farmers in Western North Carolina, including notable partnerships with producers like Apple Brandy Beef and Hickory Nut Gap Farm. This dedication to supporting sustainable and humane agriculture has captured the hearts of many conscientious consumers.
However, the journey hasn’t been entirely smooth sailing. Just as The Chop Shop Butchery was settling into its new space, Hurricane Helene hit Western North Carolina, creating additional challenges for both the new location and the original Asheville store. Standish noted, “In a town where we serviced a majority of the restaurants, there are less than 30% currently open, and those that are open are not at full capacity.” The impact of the hurricane and its aftermath has significantly affected the business climate in Asheville, which typically enjoys bustling tourism and a vibrant local market.
Although the situation in Asheville has been tough, Standish remains positive. He pointed out that the recovery from the hurricane has been slow and the local community has faced difficulties. Many families are feeling the pressure of reduced disposable incomes. Despite these challenges, The Chop Shop Butchery prepared ahead for the holiday season by ordering thousands of turkeys. Unfortunately, many of these orders were canceled in the aftermath of the hurricane, leaving the butchery with a bit of a surplus. However, they’re determined to keep their commitments to the farmers and offer these fresh turkeys to customers.
As Thanksgiving draws near, The Chop Shop Butchery is ready to help Charlotte families create a hearty feast. Standish shared his personal favorites for holiday meals, saying, “One thing you will always see on my table for the holidays is a nice roast of beef, something like a NY strip roast or rib roast, after all, we are butchers!” For those looking for something a bit different, the butchery also offers delicious options like a brined pork loin roast, cold-smoked pork chops, and even chicken pot pie. If there’s one thing that can bring comfort during the holiday hustle and bustle, it’s a hearty and satisfying meal.
